Soak the chopped onion in water for 10 minutes, squeeze out moisture. Combine the onion, chicken, sugar, rice wine, 1 tablespoon of soy sauce, and egg. Stir until thoroughly mixed. roll into bite size balls. Heat oil in pan. Add the chicken balls and brown on all sides. Combine the water, sherry, and remaining soy sauce. Pour over chicken balls and cook until the liquid is almost evaporated. Remove from heat and serve. Serves 4
