| Grilled Shrimp
4 to 5 uncooked shrimp, per person, with shells 1 cup of olive oil Juice of 2 lemons 1/4 cup of soy sauce 1/2 cup of dry red wine 1/4 cup of chopped parsley 3 tablespoons of fresh or dried tarragon |
| Cut out black vein, but leave shell attached to shrimp. Mix all ingredients. Pour over shrimp. Marinate for at least 2 hours. Cook shrimp over hot coals for 5 to 6 minutes. Shrimp should be moist and tender with slightly charred shells. |
