Sweet Potatoes with Oatmeal Topping

3 large Sweet potatoes
1/3 Stick of butter; softened
3 tablespoons of firmly packed brown sugar
3 tablespoons of orange juice
3 tablespoons of pineapple-orange marmalade
2 teaspoons of finely grated fresh
1 teaspoon of salt
Topping:
1/2 cup of rolled oats
1/2 cup of firmly packed brown sugar
1/4 cup of flour
1/2 teaspoon of cinnamon
1/4 cup of butter

Prick potatoes and microwave on high until soft. Scoop flesh into large bowl and mash with butter, sugar, juice, marmalade, gingerroot and salt. Spread mixture evenly in 2-qt. baking dish sprayed with non-stick spray. Preheat oven to 400ºF. Using pastry cutter, combine topping ingredients until mixture resembles coarse meal. Sprinkle topping over potato mixture and bake in middle of oven until topping is lightly browned, about 25 minutes.
